Melt 1 tablespoon of olive oil and 2 tablespoons of butter in a large pan over medium heat. Add the mushrooms and sauté until well cooked (about 8 minutes).
Add the parsley and season with salt and pepper. Place the mushrooms in a deep dish.
Add the remaining butter and oil to the pan and heat over medium heat.
Season the filets with salt and pepper and cook in the pan for about 3-4 minutes on each side or until they are cooked to your desired doneness. Remove from the pan and place on a warm plate to keep them from cooling while you make the sauce.
Add the onion and garlic and sauté for 3 minutes. Add the Madeira and allow to boil for 2-3 minutes or until it has reduced by half.
Add the chicken or beef broth and allow to simmer for 7-8 more minutes.
Add the cream and continue to boil for 2-3 more minutes. Add the mushrooms and mix. Taste the sauce and season with salt and pepper.
Return the filets to the pan and cook for 30 seconds in the sauce, remove from heat and serve.
