Cut the stem of the mushrooms and slice each cap into three pieces.
Separate the tarragon leaves and discard the stem.
Season both sides of the steak with salt and pepper.
Heat a cast iron skillet over medium-high heat until it is very hot.
Add a splash of oil, then the steak. Cook for 2 minutes, flip, and cook for 2 more minutes.
Remove the steak from the pan and cover with aluminum foil to keep warm. Discard the oil left in the pan.
Return the skillet to the stove, reduce the heat, and add the garlic, shallot, and mushrooms. Sauté, stirring constantly, until they have softened.
Add the wine and cook until it has reduced slightly, then stir in the beef broth.
Reduce the heat to low and add the butter, one piece at a time, stirring until it melts before adding the next piece. Finally, add the tarragon and mix well.
Serve the mushroom sauce over the steak.
