Beef steak in mushroom sauce

  • 60 grams shiitake mushroom
  • 15 grams fresh tarragon
  • 1 sirloin, of beef weighing 350 grams
  • table salt
  • black pepper powder
  • canola oil, for frying
  • 1 clove garlic, peeled
  • 1/2 slices shallot, sliced
  • 75 milliliters white wine
  • 75 milliliters Knorr® granulated chicken bouillon
  • 60 grams butter, in pieces

  • Cut the stem of the mushrooms and slice each cap into three pieces.
  • Separate the tarragon leaves and discard the stem.
  • Season both sides of the steak with salt and pepper.
  • Heat a cast iron skillet over medium-high heat until it is very hot.
  • Add a splash of oil, then the steak. Cook for 2 minutes, flip, and cook for 2 more minutes.
  • Remove the steak from the pan and cover with aluminum foil to keep warm. Discard the oil left in the pan.
  • Return the skillet to the stove, reduce the heat, and add the garlic, shallot, and mushrooms. Sauté, stirring constantly, until they have softened.
  • Add the wine and cook until it has reduced slightly, then stir in the beef broth.
  • Reduce the heat to low and add the butter, one piece at a time, stirring until it melts before adding the next piece. Finally, add the tarragon and mix well.
  • Serve the mushroom sauce over the steak.
