Beef Tinga Tostadas

Beef Tinga Tostadas are a Mexican recipe made from beef brisket with red sauce. It is commonly served in casseroles accompanied by poblano strips, chicharrón in green sauce, and mole or pipián.   • 1 kilo skirt steak
  • 1/4 onions
  • 2 cloves garlic
  • 3 leaves bay
  • coarse salt
  • 4 tomatoes
  • 1 clove garlic
  • 1/4 cups chipotle chile
  • 1/4 onions
  • 1 tablespoon vegetable oil
  • 1 onion, shredded
  • 12 tostadas
  • 1 cup refried beans
  • lettuce, for serving
  • tomato, in cubes, for serving
  • sour cream, for serving
  • queso fresco, for serving
  • salsa, for serving

  • In a pot with water, cook the meat with onion, garlic, bay leaf, and enough salt for about 2 hours or until tender. Cool and shred with your hands. Reserve the cooking broth.
  • For the salsa, blend the tomato with garlic, chipotle pepper, onion, and ½ cup of the cooking broth.
  • Heat the oil over medium heat, add the onion, and sauté until slightly transparent, then add the tomato salsa, season with salt, and cook for 20 minutes.
  • Add the shredded beef, adjust seasoning, and cook for 10 more minutes.
  • Assemble the tostadas by spreading beans, adding lettuce, the shredded beef tinga, and serving with tomato, cream, cheese, and salsa. Enjoy.
