Beef Tongue in Tomato Sauce

This recipe is for a dish of beef tongue in tomato sauce. Try this different dish and share it with your family and friends. Serve with refreshing drinks (lime, hibiscus, horchata) and with tortillas, either flour or corn.

  • 1 beef tongue
  • 1 onion, large chopped
  • 2 cloves garlic
  • 3 tablespoons salt
  • 1 Jalapeño chile, whole
  • 3 tomatoes, whole
  • 2 Jalapeño chiles, whole
  • 2 tablespoons vegetable oil

  • Place the tongue, half of the chopped onion, garlic, salt, and jalapeño in a large pot.
  • Add enough water to cover the tongue by several centimeters and bring to a boil over high heat.
  • Reduce the heat to medium-low, cover, and simmer until tender, about 3 to 4 hours.
  • Remove the tongue from the water and let it cool.
  • Save the liquid. Once the tongue has cooled, remove the skin and shred it with two forks.
  • Bring water to a boil in a saucepan over high heat.
  • Add whole tomatoes along with 2 jalapeño peppers.
  • Let boil until the vegetables soften.
  • Transfer the tomatoes and chiles to a blender and blend until you achieve a smooth sauce.
  • Heat the oil in a large skillet over medium heat.
  • Add the onion and sauté for about 5 minutes.
  • Once the onion has sautéed, add the shredded tongue and the tomato sauce.
  • Simmer, stirring constantly. Pour in 2 cups of the liquid in which the tongue was cooked and cook until the liquid evaporates, leaving juicy and flavorful meat, about 20 minutes.
