  • 1/2 cups hibiscus flower, for the sauce
  • water, for the sauce
  • 3 morita chiles, clean, for the sauce
  • 1/4 white onions, for the sauce
  • 2 tablespoons butter, for the sauce
  • 2 tablespoons shallot, finely chopped, for the sauce
  • 1 sprig rosemary, for the sauce
  • 1 sprig thyme, for the sauce
  • 1 cup sugar, for the sauce
  • 1/4 cups red wine, for the sauce
  • 1 pinch salt, for the sauce
  • 1 pinch pepper, for the sauce
  • 4 tablespoons black peppercorn
  • 1/2 cups rosemary, fresh
  • 3 tablespoons thyme, fresh
  • 3 tablespoons pink peppercorn, whole
  • 2 tablespoons coarse salt
  • 1/4 cups olive oil
  • 1.5 kilos center-cut tenderloin

  • Preheat the oven to 180° C
  • For the sauce, heat the hibiscus and water in a pot, add the morita chili and onion, cook until the hibiscus softens and the flavor is extracted.
  • Heat a small pot over medium heat with the butter, cook the shallot with the rosemary and thyme, strain the previous preparation and pour it to cook together with the red wine and sugar, reduce the sauce until it thickens. Season with salt and pepper, set aside.
  • For the crust, in a bowl, place the pepper, rosemary, thyme, pink pepper, and grain salt, crush to make a powder, add the olive oil and mix.
  • On a board, coat the fillet, cover it with the previous mixture on all sides.
  • Place the fillet in a baking dish, wrap it in aluminum foil, bake for 20 minutes, remove the beef fillet and on a board, with the help of a knife, cut slices 3 fingers thick, set aside.
  • Serve the beef fillet topped with the hibiscus sauce and accompany it with salad and mashed potatoes.
