Mix the ground meat, egg, Worcestershire sauce, salt, and pepper.
Prepare the burgers. Divide the meat into 6 equal portions and, with wet hands, form patties that are 10 cm wide and 2 cm thick. (There's no need to compact the meat too much.) Season both sides with salt and pepper.
Brush the onion with oil.
Cook the bacon until crispy for 7-10 minutes on the hottest part of the grill. Place on paper towels to absorb the grease.
Place the burger patties on the hottest part of the grill and cook until their internal temperature reaches 63 degrees (about 4-6 minutes per side).
One minute before the meat is ready, place the bread face down on the grill to warm it (on the cooler part of the grill).
Prepare the burgers. Place the meat on the bread, then the bacon, the guacamole, and the top of the bread.
