1 tablespoon garlic, finely chopped for the filling
500 grams ground beef, for filling
1 tablespoon paprika, for the filling

1/4 cups tomato purée, for the filling

For the filling, in a skillet over medium heat cook the bacon until it releases its fat, add the onion, garlic, and meat. Cook until it changes color and add the paprika, cumin, tomato puree, beans, season to your liking with salt and pepper, cook for 20 minutes or until the liquid reduces and set aside.
For the sauce, heat a small pot over medium heat with the oil and cook the garlic with the onion and tomato until it breaks down, about 20 minutes. Add the chiles, clove, pepper, and fill with broth, boil until the liquid reduces, season with salt. Let cool slightly.
Blend the sauce with the vinegar until you get a smooth mixture and adjust seasoning.
On a board, spread a burrito tortilla with a bit of guacamole, place the meat and finish with a bit of rice, close it like a burrito and cut in half.
Serve the burrito drenched with the sauce, top with pickled red onions and accompany with lime.
