Picadillo with Vegetables

This picadillo with vegetables is delicious, it's a healthy and very tasty recipe ideal for serving at lunchtime.

  • 1 container tomato purée
  • 2 tablespoons oil
  • 4 tablespoons onion, chopped
  • 400 grams ground beef
  • 1 potato , cut into cubes
  • 1 carrot , cut into cubes
  • 1 leaf bay
  • 1 tomato
  • 1 clove garlic
  • 3/4 cups water
  • 1 zucchini , cut into cubes

  • Heat the oil in a pot and sauté the onion.
  • Add the potatoes, zucchini, and carrots. Fry for 2 min.
  • Brown the ground meat until it takes on a slightly golden color and separates well.
  • Blend the tomato with the water and garlic. Strain and pour into the pot with the meat.
  • Add the tomato purée.
  • Let it cook for 10 more minutes on low heat with the bay leaf.
