Beef in its juice

You will love it after trying it; it's very easy and simple to prepare, and the best part is that it takes very little time, and there's no need to cook everything first, so go for it.

  • 1/4 bacon
  • 1 kilo meat, in its juice
  • 10 tomatillos
  • 1 onion
  • 1 bunch fresh cilantro
  • 5 tomatillos, for the sauce
  • 1 tomato
  • scallions, to taste
  • 4 serrano chiles, or green
  • oil
  • water
  • salt
  • beans, from the pot (optional)

  • Cook the meat with 1/2 onion for 45 minutes if using a pressure cooker; if not, cook for 2 hours.
  • In the blender, add the 10 green tomatoes (the smaller, the better the flavor), the previously washed and disinfected bunch of cilantro, the other half of the onion, and 2 serrano chiles—all of this raw.
  • Once the meat is cooked, remove it and pour in the blender mixture; don't be alarmed if you see the broth is green; that's how it should look—remember to season.
  • Brown the bacon; once browned and well cooked, remove it from the oil.
  • To avoid wasting the oil, I roast the tomatoes, onion, and chiles; once roasted, I pour them into the blender, add a little salt, and there you have a perfect sauce to accompany it.
