Lentils with Rabbit

To try rabbit meat in a different way, try this recipe with lentils; it takes a little time, but it is well worth it.

  • 1 kilo rabbit, chopped
  • 200 grams lentil legumes La Asturiana®
  • 1 green bell pepper 1 green bell pepper
  • 1 leek 1 leek
  • 1 onion 1 onion
  • 2 carrots 2 carrots
  • 5 tablespoons olive oil  5 tablespoons olive oil

  • In a saucepan with a little oil (4 or 5 tablespoons), sauté the seasoned rabbit.
  • Add an onion, leek, bell pepper, and carrots, all finely chopped (in brunoise, diced into small squares).
  • Stir the sauté with the rabbit, add a teaspoon of sweet paprika, and add the lentils.
  • Cover the lentils with water, add a little salt, and let them cook for about 50 minutes.
  • If the lentils become dry, we can add a little cold water during cooking.
  • Let it rest for 5 minutes before serving.
  • Serve the lentils hot along with the rabbit as a main dish.
