Lentils with Rabbit

To try rabbit meat in a different way, try this recipe with lentils; it takes a little time, but it is well worth it.

1 kilo rabbit, chopped
200 grams lentil legumes La Asturiana®
1 green bell pepper
1 leek
1 onion
2 carrots
5 tablespoons olive oil
salt
pepper

In a saucepan with a little oil (4 or 5 tablespoons), sauté the seasoned rabbit.
Add an onion, leek, bell pepper, and carrots, all finely chopped (in brunoise, diced into small squares).
Stir the sauté with the rabbit, add a teaspoon of sweet paprika, and add the lentils.
Cover the lentils with water, add a little salt, and let them cook for about 50 minutes.
If the lentils become dry, we can add a little cold water during cooking.
Let it rest for 5 minutes before serving.
Serve the lentils hot along with the rabbit as a main dish.
