4 beef tenderloins
200 grams pumpkin seeds, (shelled pumpkin seeds)
50 grams peanuts, peeled
1 kilo tomatillo
2 cloves garlic
1 leaf lettuce
1 leaf radish, chopped
2 tablespoons oil
1 cup fresh cilantro, chopped
1/2 liters chicken broth
4 serrano chiles
1/4 onions, chopped

In a pot with water and a little onion, boil the meat fillets until they are well cooked, approx. 30 minutes.
Remove the meat from the water and place it on a plate while you prepare the pipián.
Bring 4 cups of water to a boil in a large pot. Add the serrano chiles and cook for 10 minutes.
Then add the tomatoes and cook for 5 minutes or until they change color.
Remove the chiles and tomatoes from the water and place them in a food processor.
Add the onion, garlic, lettuce, radish leaves, and cilantro to the processor and blend. Place on a plate.
Now in the food processor, process the pumpkin seeds and peanuts until you have a very fine flour.
In a large skillet with a little oil, fry the seed flour and peanuts for 2-3 minutes, stirring constantly.
Add the green tomato mixture and 2 cups of chicken broth to the skillet and bring the mixture to a boil, cover, and cook for 10 minutes.
Add the meat and cook for 10 more minutes.
