Mofongo is a typical Caribbean dish made from fried plantains and pork cracklings. It's delicious, served with beef broth and meats, and can be consumed both for lunch and dinner.
To make the broth; in a pot heat the oil over medium-high heat, add the meat and brown it, making sure it doesn't burn.
Add the garlic and onion and mix. Then add 4 cups of water, cilantro, culantro, and oregano.
Simmer over medium-low heat, adding water from time to time to maintain the same level.
Add salt to taste, strain, remove the solids, and set aside.
To make the mofongo; heat a tablespoon of oil and sauté the garlic over very low heat for one minute. Remove from heat and set aside.
In a saucepan heat the rest of the oil and fry the plantains without toasting them, but until they are cooked.
Mash the plantains in a mortar, mixing with the sautéed garlic and chicharrón, to this mixture add two tablespoons of beef broth and continue mashing and mixing until the liquid disappears.
Serve in a mortar, accompanied by beef broth and meat to your liking.
