Cook the meats with garlic and onion. Boil the chiles, tomato, and jitomate. Grind them with garlic and onion; fry in lard, and let it season.
Incorporate the sauce into the previously cooked meats with their broth.
When it is boiling, add avocado leaves and cilantro sprigs. Boil and serve.
