  • 1 meat, from goat hip
  • 2 kilos tomato
  • 1 kilo tomatillo
  • 10 cuaresmeño chiles
  • 10 guajillo chiles
  • 10 serrano chiles
  • 5 cloves garlic
  • 2 onions
  • 1 bunch fresh cilantro
  • lard
  • leaves avocado

  • Cook the meats with garlic and onion. Boil the chiles, tomato, and jitomate. Grind them with garlic and onion; fry in lard, and let it season.
  • Incorporate the sauce into the previously cooked meats with their broth.
  • When it is boiling, add avocado leaves and cilantro sprigs. Boil and serve.
