  • Cook the tomatoes in a pot over medium heat until soft. Remove the tomatoes from the hot water and set aside, there is no need to keep the water.
  • Blend the cooked tomatoes with the onion, garlic, chipotle pepper, and tomato puree until well combined. Pour the blended mixture into a pot with hot vegetable oil, then add the chicken broth, season with salt and pepper, and cook for 10 minutes over medium heat, stirring occasionally. Set aside.
  • While the broth is cooking, prepare the meatballs. Blend the onion, garlic, mint, water, and enough salt and pepper until well combined. Strain the blended mixture and keep what is left in the strainer, meaning the finely chopped ingredients.
  • Place the ground meat in a bowl and pour in the ingredients from step 3, then add the soaked rice and the egg, and adjust the seasoning with salt and pepper. Mix the ingredients until a manageable consistency is obtained. Form 3 cm balls with your clean hands and repeat until the mixture is finished.
  • Once the broth is boiling, place the meatballs in the chipotle broth and cook over medium-low heat for another 15 minutes.
  • Serve the meatballs in chipotle broth, garnish with a few mint leaves, and accompany with boiled beans.
