This recipe for meatballs in chipotle broth is a different way to enjoy a classic dish, as the chipotle and mint give it a lot of flavor. It is a very easy dish to prepare and is also ideal for treating your family when you run out of meal options.
1/4 cups chipotle chile in adobo sauce, canned, for the broth
1 cup tomato purée, for the broth
1 tablespoon vegetable oil, or olive oil for the broth
2 cups chicken broth, for the broth
1/4 onions, for the meat
1 clove garlic, for the meat
1/4 bunches spearmint, for the meat
1/4 cups water, for the meat
400 grams ground beef, for the meatballs
1/2 cups rice, soaked in hot water for 10 minutes and drained, for the meatballs
1 egg, for the meatballs
pinches salt, for seasoning
pepper, for seasoning
spearmint, for decorating
black frijoles de la olla, for accompanying

Cook the tomatoes in a pot over medium heat until soft. Remove the tomatoes from the hot water and set aside, there is no need to keep the water.
Blend the cooked tomatoes with the onion, garlic, chipotle pepper, and tomato puree until well combined. Pour the blended mixture into a pot with hot vegetable oil, then add the chicken broth, season with salt and pepper, and cook for 10 minutes over medium heat, stirring occasionally. Set aside.
While the broth is cooking, prepare the meatballs. Blend the onion, garlic, mint, water, and enough salt and pepper until well combined. Strain the blended mixture and keep what is left in the strainer, meaning the finely chopped ingredients.
Place the ground meat in a bowl and pour in the ingredients from step 3, then add the soaked rice and the egg, and adjust the seasoning with salt and pepper. Mix the ingredients until a manageable consistency is obtained. Form 3 cm balls with your clean hands and repeat until the mixture is finished.
Once the broth is boiling, place the meatballs in the chipotle broth and cook over medium-low heat for another 15 minutes.
Serve the meatballs in chipotle broth, garnish with a few mint leaves, and accompany with boiled beans.
