Pork Rind Meatballs

Delicious beef meatballs with chicharrón. This ingredient gives them a special and delicious flavor. They are also topped with a tomato and chipotle sauce that makes them even tastier. Prepare them at home and enjoy with family.

  • 750 grams ground beef
  • 250 grams pork rinds, mashed
  • 2 eggs
  • 2 cloves garlic
  • 1 onion, finely chopped
  • 1/2 cups parsley , finely chopped

  • 10 tomatoes, cooked
  • 4 chipotle chiles, marinated
  • 3 tablespoons oil
  • 2 cups mixed vegetables, (potato, carrot, chayote)

  • Mix the meat, the chicharrón, the garlic, the onion, eggs, and a little milk. Add the parsley, salt, and pepper; mix well and form balls to the desired size.
  • Blend the cooked tomato with the chipotles, strain, and season while frying with a little oil.
  • Once it reaches a boil, add the meatballs and let cook for 10 minutes.
  • Add the vegetables, cover, and let cook for 15 more minutes.
