Carefully uncover; check if they are cooked to your liking, and if so, cook the vegetables in the same water for about 3 to 5 minutes.
Once cooked, add the ground tomato along with two chipotle peppers, 1/4 onion, and garlic, return the meatballs to the pot and bring everything to a boil (with the pot uncovered), check the seasoning and serve hot.
