Medium
  • In a pot with water, boil our one and a half pounds of tenderloin until soft, adding a pinch of salt.
  • When our meat is cooked, we remove the water and cut our meat into 3 equal portions. The first we process until it is fine. The second we cut into julienne. The third we cut into small cubes.
  • The first we process until it is fine and in a skillet, we fry it with a little olive oil, spices, half an onion in rings, and a teaspoon of achiote.
  • The second we cut into julienne and in a skillet, we fry it with a little olive oil, chili pepper, bell pepper, a teaspoon of achiote, spices, and the remaining onion in rings.
  • The third we cut into small cubes, in a skillet, we fry with olive oil, soy sauce, spices, achiote, and the pineapple in pieces; once it is well fried and golden, we turn off the heat and quickly incorporate the lemon juice.
