The 100% Mexican tacos are delicious noodle tacos. It is a very original, different, fun, but above all, very tasty recipe. You will see how it reminds you of the noodle soup your mom used to make when you were a child.
Guacamole: peel the avocado and place it in a blender, add serrano chili, salt, lime, and cilantro (to taste) and blend lightly. Set aside.
Noodle Soup: place the tomato, onion, and garlic in a blender, add salt and pepper to taste, and blend. Set aside. Heat oil in a pan and fry the noodle soup, and before it starts to brown, add the sauce, let it simmer until the sauce is reduced. Set aside.
Blanch the whole carrot (peel it with a grater) and cut it into strips at the end, and also blanch the green beans. Wash, disinfect, and chop the lettuce. Set aside.
Tacos: lightly heat the tortillas, add the noodle soup and roll them up, secure with a couple of toothpicks, cut the taco in half (to make 2), and fry in oil until golden brown.
