Filet in Morel Sauce

A very tasty and quick recipe to prepare beef filet in a creamy morel sauce.

  • 1 kilo beef tenderloin
  • 100 grams morel mushroom, fresh or dried
  • 1/2 canned beef broth
  • 1/4 liters sour cream
  • 1 stick butter, 90 grams
  • 1/2 onions
  • cloves garlic
  • 1/4 cups vegetable oil

  • Blend the onion, garlic, and oil. Let the raw filet marinate in this for at least 1 hour.
  • Preheat a griddle for 15 minutes and sear the filet until browned on the outside but red on the inside. About 10 minutes on each side. If a griddle is not available, it can also be seared in a large skillet.
  • To prepare the sauce, place the morels and butter in a skillet over low heat for 3 minutes until soft.
  • Blend together with the cream, broth, and the morels from the skillet. If desired, you can leave pieces of morels. Add salt and pepper to taste.
  • Preheat the oven to 160 degrees and heat the filet for 15 minutes.
  • Heat the sauce separately on the stove until warm.
  • To serve, coat the filet with the sauce and bake for 20 minutes in a dish covered with aluminum foil.
