I haven't had tacos de alambre and bell pepper in a long time; the last time I had them was with my dad, and I love them.

In a skillet, add the oil, heat it, and add the bacon until it is browned at the edges, then drain and set aside.
In the same pan, fry the onion; once it is translucent, add the bell pepper and cook on low heat to soften.
Season the meat with salt and pepper and add it to the skillet along with the bacon; cook the meat until it is well done.
Add the shredded Oaxaca cheese evenly over the meat and distribute it.
Warm the tortillas and add the prepared mixture while the cheese melts.
