Wash the chicken in hot water to relax the muscles and make it tender, then cut the lemon in half and rub it on the chicken (outside).
For the filling, place the stick of butter, pepper, salt, parsley, 1 tablespoon of olive oil, and cilantro in a food processor.
Carefully place the filling between the skin and the meat of the whole chicken, putting the remaining filling on the outside of the chicken and seasoning with salt and pepper to taste. In a tray, place one of the opened beers in the center and put the chicken on top of it so that the chicken stands upright for a complete roasting in the oven, then around the chicken (outside the tray) place the lemon or orange juice and the remaining half of the beer and bay leaves.
Place in the preheated oven for approximately 1 hour and 15 minutes, after the time is up, remove and reserve the juice at the bottom of the tray.
Blend the reserved juice and use it as a dressing.
