Chicken and Spinach Casserole

This chicken and spinach casserole is very easy to prepare, full of flavor, low in fat, and has the creamy and healthy touch that only Oikos® Greek Yogurt Protein can provide. Being a lactose-free product, it is ideal for people with lactose intolerance.

  • 6 chicken breasts
  • 2 tablespoons paprika
  • pinches salt
  • pepper
  • 2 tablespoons vegetable oil, or olive oil
  • 3 cups spinach
  • 1 1/2 cups Oikos® Protein Greek Yogurt

  • 2 tablespoons garlic powder

  • Season the chicken breasts with salt, pepper, and paprika.
  • Heat a skillet over medium heat with vegetable oil, then sear the breasts for about 5 minutes on each side. Add the spinach, reduce the heat, and cook the breasts for another 10 minutes.
  • Pour in the Oikos® Greek Yogurt Protein and garlic powder into the skillet, cook for 3 minutes, and season if necessary.
  • Serve with a salad, rice, or your favorite side dish.
