Cut the chicken into 2-centimeter wide cubes. Cut the zucchini into about 1.5 centimeters.
Place the chicken in a bowl with a tablespoon of olive oil, salt, and pepper. In another bowl, mix the vegetables with 2 tablespoons of olive oil and season with pepper and salt. Divide the chicken into 4 skewers. Assemble the vegetable skewers separately, using two sticks for each vegetable.
Place the onion skewers on the grill and cook for 5 minutes. Add the chicken and zucchini skewers, and cook for another 5 minutes. Flip the chicken and zucchini skewers. Add the mushroom skewers and cook all for another 10 minutes, flipping to ensure even cooking on both sides.
Season with lemon juice, olive oil, and parsley.
