Chicken and Vegetable Skewers

These chicken and vegetable skewers are a true delight.

  • 700 grams chicken, boneless and skinless
  • 3 tablespoons olive oil
  • 2 zucchinis, medium
  • 16 chives, peeled
  • 16 button mushrooms
  • 1 lime
  • 1/2 cups parsley, finely chopped
  • pinches coarse salt
  • pepper, freshly ground

  • Preheat the grill to medium heat.
  • Cut the chicken into 2-centimeter wide cubes. Cut the zucchini into about 1.5 centimeters.
  • Place the chicken in a bowl with a tablespoon of olive oil, salt, and pepper. In another bowl, mix the vegetables with 2 tablespoons of olive oil and season with pepper and salt. Divide the chicken into 4 skewers. Assemble the vegetable skewers separately, using two sticks for each vegetable.
  • Place the onion skewers on the grill and cook for 5 minutes. Add the chicken and zucchini skewers, and cook for another 5 minutes. Flip the chicken and zucchini skewers. Add the mushroom skewers and cook all for another 10 minutes, flipping to ensure even cooking on both sides.
  • Season with lemon juice, olive oil, and parsley.
