Chicken Birria

  • 4 tomatoes
  • 1/4 onions
  • 5 cloves garlic
  • 7 guajillo chiles, cleaned and deveined, soaked in hot water
  • 2 ancho chiles, cleaned and deveined, soaked in hot water
  • 2 morita chiles, cleaned and deveined, soaked in hot water
  • 3 tablespoons sesame seeds
  • 1 tablespoon oregano
  • 1 tablespoon cumin
  • 1 tablespoon allspice berry
  • 1 teaspoon clove
  • 1 teaspoon cinnamon powder
  • 6 chicken thighs, skinless
  • 6 chicken drumsticks, skinless
  • salt
  • 3 leaves bay
  • onion, for accompaniment
  • cilantro, for accompaniment
  • lime, for accompaniment
  • tortillas, for accompaniment

  • Roast the tomatoes, onion, and garlic on a griddle until charred. Blend along with the chiles, the soaking water, and the spices.
  • In a small pot, add the chicken, the previously strained sauce, salt, bay leaves, mix and cover. Cook for 40 minutes.
  • Serve hot and accompany with onion, cilantro, limes, and tortillas. Enjoy.
