Chicken Breast Parmesan without Egg

  • 4 boneless chicken breasts
  • 1 cup Parmesan cheese
  • 1/4 cups herbes de Provence
  • 3/4 cups bread crumbs
  • 3 cloves garlic
  • 1 cup olive oil
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 6 fresh basil leaves
  • 1/2 tablespoons fresh oregano

  • Peel and chop the garlic cloves. Mix 2 of them with olive oil, mash, and set aside.
  • Pour the breadcrumbs into a deep bowl and mix the remaining garlic clove (mashed) with the Parmesan cheese and a pinch of salt and pepper.
  • Add the Provençal herbs, oregano, and fresh basil.
  • Slice the chicken breasts and coat them in olive oil and garlic.
  • Once the meat is well coated, dip it in the mixture of breadcrumbs, Parmesan, herbs, and garlic. Add a pinch of salt.
  • Place the chicken in a previously greased baking dish and bake at 180° for 30 to 40 minutes, until the chicken fillets are golden brown.
  • Remove from the oven and serve hot.
