Chicken Breasts in Chipotle Sauce with Mushrooms

  • 1 1/3 cups cow's milk
  • 2 tablespoons chipotle chile, ground
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • 1/4 cups onion
  • 1 can button mushrooms, drained
  • salt

  • 6 chicken breasts
  • 1 package cream cheese

  • HEAT a pan with the oil and fry the onion until translucent. Add the mushrooms and sauté.
  • BLEND the remaining ingredients for the sauce (cream cheese, milk, chipotle, chicken broth, salt, and pepper) and pour over the above.
  • HEAT until it comes to a boil.
  • HEAT a little oil in another pan and fry the chicken breasts.
  • SERVE over the chicken.
