4 chicken breasts, deboned and cut in half
3 tablespoons unsalted butter
1 tablespoon oil
2 cups thick cream
60 grams roquefort cheese
3 cloves garlic, crushed

Wash and dry the chicken breasts with paper towels.
Spread the chopped onion on the breasts and season with salt and pepper.
In a skillet, melt the butter in the oil and fry the breasts on both sides for about 5 minutes. Place in a baking dish that can go in the oven.
In a saucepan over low heat, mix the cream, Roquefort cheese, and crushed garlic until it boils for 3 minutes, stirring constantly.
Strain the sauce through a colander and cover the breasts with it.
Bake the breasts for 30 minutes at 200°C.
