Chicken in Mexican Sauces and Red Wine

4 tablespoons garlic
4 tablespoons vegetable oil
1 onion, finely chopped
7 cups water
1 bottle red wine
4 tablespoons Worcestershire sauce
4 tablespoons Maggi seasoning
2 tablespoons chipotle chilli sauce, (to taste)
4 tablespoons soy sauce
4 potatoes, cut into cubes
2 tablespoons black pepper

In a large pot, heat the oil, sauté the garlic and onion for 5 minutes over medium heat.
Add the chicken, potatoes, and cook for 2-3 minutes.
Add the water, red wine, and all the sauces.
Allow it to simmer on low heat; cover and cook for 45 minutes or until the chicken is fully cooked.
Remove the lid and cook for an additional 15 minutes to allow much of the broth to evaporate and the sauce to thicken. Serve.
