Chicken in Red Wine

A delicious way to prepare chicken in a sauce based on red wine with spring onions and mushrooms.

  • 1 chicken, cut into pieces
  • 1 chicken breast, whole, cut into 4
  • 3 tablespoons flour
  • 1/2 onions
  • 1 tablespoon vinegar
  • 3 tablespoons olive oil
  • 2 tablespoons rum
  • 2 cups red wine
  • 2 cups chicken broth
  • 1 sprig aromatic herbs
  • 3 dozens green onion, small (including the green part), chopped
  • 100 grams raw ham, in a single slice
  • 200 grams button mushroom, sliced
  • 90 grams butter

  • Wash the chicken cut into pieces.
  • With a fork, mix the butter (45 grams), vinegar, salt, and pepper to taste.
  • Spread this mixture over the chicken on all sides.
  • In a large pot, fry the chicken in oil, starting with the skin side.
  • Once all the chicken is nicely browned, flame the pot with the rum (very carefully).
  • Once the flame of the rum goes out, add the red wine and let it evaporate, cooking over medium-low heat for 5 minutes.
  • Add the chicken broth and herbs. Cover and cook for 15 more minutes.
  • Melt an additional 45 grams of butter and brown the ham.
  • Add the spring onions (without the tail) with a cross cut on top.
  • Once the spring onions look transparent, add the sliced mushrooms.
  • Season with salt and pepper.
  • Add everything to the pot with the chicken and let it cook until the chicken is perfectly cooked.
  • Serve hot with white rice.
