1 chicken, cut into pieces
1 chicken breast, whole, cut into 4
3 tablespoons flour
1/2 onions
1 tablespoon vinegar
3 tablespoons olive oil
2 tablespoons rum
2 cups red wine
2 cups chicken broth
1 sprig aromatic herbs
3 dozens green onion, small (including the green part), chopped
100 grams raw ham, in a single slice
200 grams button mushroom, sliced
90 grams butter

Wash the chicken cut into pieces.
With a fork, mix the butter (45 grams), vinegar, salt, and pepper to taste.
Spread this mixture over the chicken on all sides.
In a large pot, fry the chicken in oil, starting with the skin side.
Once all the chicken is nicely browned, flame the pot with the rum (very carefully).
Once the flame of the rum goes out, add the red wine and let it evaporate, cooking over medium-low heat for 5 minutes.
Add the chicken broth and herbs. Cover and cook for 15 more minutes.
Melt an additional 45 grams of butter and brown the ham.
Add the spring onions (without the tail) with a cross cut on top.
Once the spring onions look transparent, add the sliced mushrooms.
Season with salt and pepper.
Add everything to the pot with the chicken and let it cook until the chicken is perfectly cooked.
Serve hot with white rice.
