Chicken Tinga Donkitos

  • Cook the chicken breast, skinless and boneless, for 35 minutes in one liter of water with a teaspoon of salt.
  • Once the chicken breast is cooked, shred it, reserving the chicken broth for the next step.
  • Slice the tomatoes into quarters, remove the seeds, and place them in the blender with 1/8 of an onion and one cup (250 ml) of the broth obtained from cooking the chicken breast. Blend until you achieve a liquid consistency of tomato puree.
  • In a skillet, cook the chorizo, add the shredded chicken, and once integrated with the turkey chorizo, add one cup (250 ml) of tomato puree. Cover and let the stew rest.
  • Meanwhile, on a griddle, start heating the flour tortillas previously spread with mayonnaise.
  • Place a tablespoon of the chicken tinga on each tortilla, roll them up, and cut into four equal parts.
