Chicken Tinga with Chipotle Chile

  • 3 chicken breasts
  • 1 head garlic
  • 1/8 onions
  • 1 pinch salt
  • 6 tomatoes
  • 3 tablespoons chipotle chile
  • 3 cloves garlic
  • 1 cup chicken broth
  • 1 tablespoon vegetable oil
  • 2 onions
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • tostadas
  • refried beans
  • lettuce
  • queso fresco
  • sour cream
  • green salsa

  • In a small pot, cook the chicken breast with garlic, onion, and salt for 40 minutes. Let cool and shred.
  • Blend the tomatoes along with the chipotles, garlic, and broth until you have a smooth sauce.
  • Heat the oil in a deep skillet over low heat and sauté the onion.
  • Add the sauce and cook for 10 minutes. Add the chicken and cook for 10 more minutes. Season to taste.
  • Spread refried beans on the tostada, add the tinga, lettuce, cream, cheese, and green sauce.
