1 onion, chopped
2 tablespoons vegetable oil
1 kilo chicken breast, cut into cubes or strips
3 tablespoons soy sauce
4 cloves garlic
1 red bell pepper, chopped
1 cup raw pea, frozen peas
4 tablespoons chipotle chile sauce
1 tablespoon cumin
2 tablespoons honey
2 cups cashews
2 tablespoons fresh cilantro, chopped
1/4 cups maple syrup

Heat a large skillet over medium heat, add vegetable oil and cook the chicken until well cooked on both sides.
Add soy sauce, onion, bell pepper, and garlic and cook for 2-3 minutes.
Add the peas and mix well.
Add the chipotle and cumin and mix.
Drizzle with honey and maple syrup, remove from heat and add cilantro and cashews.
Mix well and serve with brown rice.
