Chicken with Cashews and Chipotle

A recipe that becomes a family favorite, especially for kids. Chicken with cashews is a recipe originating from India/Asia but with this chipotle twist, it receives a Latin flavor.

  • 1 onion, chopped
  • 2 tablespoons vegetable oil
  • 1 kilo chicken breast, cut into cubes or strips
  • 3 tablespoons soy sauce
  • 4 cloves garlic
  • 1 red bell pepper, chopped
  • 1 cup raw pea, frozen peas
  • 4 tablespoons chipotle chile sauce
  • 1 tablespoon cumin
  • 2 tablespoons honey
  • 2 cups cashews
  • 2 tablespoons fresh cilantro, chopped
  • 1/4 cups maple syrup

  • Heat a large skillet over medium heat, add vegetable oil and cook the chicken until well cooked on both sides.
  • Add soy sauce, onion, bell pepper, and garlic and cook for 2-3 minutes.
  • Add the peas and mix well.
  • Add the chipotle and cumin and mix.
  • Drizzle with honey and maple syrup, remove from heat and add cilantro and cashews.
  • Mix well and serve with brown rice.
