Delicious recipe for chicken birria style but simpler. This is a very easy way to prepare chicken with a little kick; you can serve this dish with some white rice or eat it with freshly made corn tortillas. You will love it.

1 kilo chicken, in pieces
1 can chipotle chile, small
4 tomatoes
2 cups water
2 leaves bay
2 tablespoons butter, or oil
Preparation

Wash the chicken pieces and season with salt and pepper.
Lightly fry the chicken with the bay leaves in a hot saucepan with butter or oil.
Blend the chipotle peppers with the tomatoes and water.
Pour the blended sauce into the saucepan with the chicken, add salt to taste and let it simmer for about 25 to 30 minutes.
