Chicken with Chipotle

Delicious recipe for chicken birria style but simpler. This is a very easy way to prepare chicken with a little kick; you can serve this dish with some white rice or eat it with freshly made corn tortillas. You will love it.

  • 1 kilo chicken, in pieces
  • 1 can chipotle chile, small
  • 4 tomatoes
  • 2 cups water
  • 2 leaves bay
  • 2 tablespoons butter, or oil

  • Wash the chicken pieces and season with salt and pepper.
  • Lightly fry the chicken with the bay leaves in a hot saucepan with butter or oil.
  • Blend the chipotle peppers with the tomatoes and water.
  • Pour the blended sauce into the saucepan with the chicken, add salt to taste and let it simmer for about 25 to 30 minutes.
