Chicken with Dried Herbs, Honey, and Lemon

  • 2 potatoes, large washed, peeled, and cubed
  • 4 carrots, washed, peeled, and sliced
  • 4 zucchinis, washed, peeled, and sliced
  • 1 teaspoon dry rosemary
  • 1 teaspoon garlic pieces Mccormick®
  • 1 teaspoon fresh cilantro, dry
  • 1 teaspoon dried oregano
  • 1 teaspoon thyme
  • 1 onion, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoons lime zest
  • 2 tablespoons honey
  • 8 chicken thighs, or skinless chicken legs

  • Preheat the oven to 250°C.
  • In a bowl, we mix the lemon juice, zest, honey, stir, and incorporate the thyme, half of the garlic powder, cilantro, and the chicken pieces. We mix and set aside.
  • In another bowl, we combine the remaining ingredients, mix well, and pour into a long and deep baking dish that will go into the oven.
  • On top of the vegetables, we place the pieces of chicken from the first bowl we made.
  • We cover with aluminum foil and bake for 45 min. or until the potatoes and carrots are tender.
