  • 2 chicken thighs
  • 2 chicken drumsticks
  • 2 tablespoons vegetable oil
  • 1/4 onions, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 2 cups mango, cut into cubes
  • 2 chipotle chiles in adobo sauce
  • 1 cup coconut cream
  • salt and pepper
  • shredded coconut, toasted, for garnish

  • Preheat the oven to 180°C or the electric oven to medium temperature.
  • Place the chicken pieces in a baking dish, season with salt and pepper, and bake for 1 hour until golden.
