Chicken with Mayonnaise

  • 3 cups mayonnaise with lemon juice McCormick®
  • 2 tablespoons garlic, finely chopped
  • 1/4 cups cilantro, finely chopped
  • 3 tablespoons chives, finely chopped

  • 3 chicken drumsticks
  • 3 chicken thighs
  • 1 cup broccoli, in medium florets
  • 1 cup potato, cut into medium cubes
  • 1 cup carrot, cut into medium cubes
  • 1 cup cauliflower, in medium florets

  • In a bowl, mix McCormick® Mayonnaise with lemon juice, garlic, cilantro, green onion, and season with salt and pepper. Set aside.
  • In a skillet over high heat, heat the oil and seal the pieces of chicken, season with salt and pepper, and cook for 3 minutes on each side or until the chicken pieces are golden brown. Set aside.
  • Place the chicken pieces in a baking dish, cover with the mayonnaise mixture, and add the broccoli, potato, carrot, and cauliflower.
  • Bake at 180° for 40 minutes.
  • Serve on a plate, accompanied by slices of rustic bread. Enjoy!
