Chicken with Parmesan and Parsley

These delicious chicken breasts are breaded with a mixture of egg, parmesan, and parsley.

  • 8 chickens, flattened
  • 2 eggs
  • 1/4 cups Parmesan cheese, grated
  • 1/4 cups fresh parsley, chopped
  • 1/2 cups white wine
  • 6 tablespoons lemon juice
  • 3 cloves garlic
  • 1/4 cups flour
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • pepper , to taste

  • In a deep bowl, mix the egg, parmesan cheese, parsley, 1/4 cup of white wine, 3 tablespoons of lemon juice, and the garlic cloves.
  • Dip each chicken breast first in flour and then in the egg and cheese mixture.
  • Heat olive oil in a pan over medium heat and cook the chicken for about 5 minutes on each side or until cooked through.
  • Remove the chicken from the pan and add the butter, the remaining white wine, and the lemon, and cook until it boils. Remove and serve the sauce over the chicken.
