Chicken with Poblano Strips

  • 1/2 boneless chicken breast, Shredded
  • 1 cup chicken broth
  • 1/2 cups table cream
  • 30 grams butter
  • 2 Poblano chiles, Skinless and cut into strips
  • 200 grams canned corn kernels
  • 2 cloves garlic, Chopped
  • 1/2 onions, Julienned
  • 250 grams queso fresco
  • 1/2 tablespoons salt
  • 1/2 tablespoons pepper

  • Melt the butter in a pan and add the onion, garlic, and corn kernels. Once it’s translucent, add the poblano peppers. Lower the heat to minimum and cover for 5 minutes.
  • Blend the broth, cream, salt, and pepper.
  • Add the mixture to the pan and add the chicken, season with salt and pepper to taste.
  • Let it simmer for ten minutes and add the cheese, wait 5 to 10 minutes for it to reduce and serve.
