Chicken with Vegetables and Rice

A simple but very tasty recipe, chicken with vegetables and rice, ideal for a good healthy meal.

  • 1 kilo chicken, shredded
  • 1 red onion
  • 1 red bell pepper
  • 2 cloves garlic
  • 2 cups white rice
  • 1 1/2 cups chicken bullion
  • 3 tablespoons achiote

  • Start cooking the rice.
  • Meanwhile, chop the onion, bell pepper, and garlic into small cubes.
  • In a skillet, add the broth, onion, bell pepper, garlic, and green beans. Add the chicken and wait for it to cook and the broth to reduce.
  • Add the achiote and sauté.
  • Once the sauté is ready and the rice is cooked, mix them well and serve hot.
