Brazilian Chicken Croquettes Coxinhas

This recipe for chicken croquettes, also known as coxinhas, are pieces of dough filled with chicken that are fried. This is a typical Brazilian street food, ideal as a snack for watching a game. This recipe includes a bit of cream cheese to give it a special touch.

  • Boil the chicken broth in a large pot and gradually incorporate the flour. Stir continuously for 2 to 3 minutes until a dough forms. Let it cool.
  • In a little oil, cook the chopped onion and red bell pepper until they are cooked. Add the chicken, chopped parsley, mozzarella cheese, and mix everything. Add the cream cheese and stir.
  • Knead the prepared dough for a few minutes (on a flat, floured surface) until it is smooth. Divide the dough into 12 parts. Using a rolling pin, form discs of dough that are about 20 cm in diameter. Place a few tablespoons of chicken filling in the center of each disc and wrap it with the rest of the dough to seal well. Shape the croquettes to resemble chicken thighs.
  • Heat the oil in a medium saucepan over medium-high heat until it's ready for frying. Fry the croquettes for 8-10 minutes until they are golden brown. Drain the croquettes on paper towels.
