  • 2 cups broccoli, blanched, cut into small florets for the filling
  • 1 cup red bell pepper, cut into strips, for the filling
  • 1 cup Manchego cheese, shredded, for the filling
  • 2 tablespoons sour cream, for the filling
  • 1 tablespoon garlic powder, for the filling
  • 1 pinch salt, for the filling
  • 1 pinch pepper, for the filling
  • 3 chicken breasts, skinless and boneless
  • 3 tablespoons butter, cut into cubes, for the sauce
  • 2 tablespoons garlic, finely chopped, for the sauce
  • 1 cup chicken broth, for the sauce
  • 1 cup whipping cream, for the sauce
  • 2 cups Parmesan cheese, shredded, for the sauce
  • 1 teaspoon nutmeg, for the sauce

  • For the filling, in a bowl mix the broccoli with the red bell pepper, the Manchego cheese, the sour cream, and season with garlic powder, salt, and pepper.
  • On a cutting board, use a knife to open the chicken breasts in half without cutting all the way through. Fill with the previous mixture, close with toothpicks, and season with salt and pepper.
  • Heat a deep skillet over medium heat with the oil and sear the chicken breasts until golden brown, remove from the skillet and set aside.
  • Add the butter to the skillet and fry the garlic until fragrant, pour in the chicken broth and cream, cook in circular motions until the ingredients are combined and it comes to a boil, add the Parmesan cheese until melted, and season with salt, pepper, and nutmeg to taste.
  • Return the chicken breasts to the skillet with the sauce and cook until the chicken is well done. Adjust seasoning.
  • Remove from the skillet and serve the chicken breasts with the sauce, slice and enjoy.
