  • 5 tablespoons achiote
  • 1/4 cups white vinegar
  • 3 guajillo chiles, deveined and seedless
  • 2 ancho chiles, deveined and seedless
  • 3 cloves garlic
  • 1/4 onions
  • 1 tomato, roasted
  • 1/2 cups pineapple juice
  • 1 tablespoon coarse salt
  • 1 tablespoon oregano
  • 1 tablespoon allspice berry
  • 1 tablespoon cumin
  • 2 cloves
  • 1 chicken breast, cut into small cubes
  • 2 tablespoons vegetable oil
  • 1 pineapple
  • 1 cup Manchego cheese, for broiling
  • fresh cilantro
  • red onion, sliced
  • flour tortillas, for accompaniment
  • lime, for accompaniment
  • guacamole, for accompaniment

  • For the marinade, blend the achiote with the vinegar, chilies, garlic, onion, roasted tomato, pineapple juice, salt, oregano, allspice, cumin, and cloves.
  • In a bowl, mix the chicken with the marinade and marinate for 2 hours in the refrigerator.
  • In a skillet, heat the oil and cook the chicken for 15 minutes or until cooked through.
  • Preheat the oven to 180°C.
  • Cut the pineapple in half and, using a spoon, hollow it out, add the chicken, sprinkle with manchego cheese, and broil for 10 minutes in the oven.
  • Garnish with cilantro and sliced onion. Serve in a taco style with corn tortillas and accompany with lime and guacamole.
