150 grams panela cheese
salt, and pepper to taste

Place the chicken schnitzels on a flat surface, season with salt and pepper on both sides.
Place the vegetables and a semi-thick slice of panela cheese in the center of the schnitzel. Roll up the schnitzel and secure with wooden toothpicks.
Place over low heat in a covered saucepan with olive oil; once well cooked, increase the heat and uncover to let them brown a bit.
Remove from heat.
