Chicken and Vegetable Rolls

  • 6 chicken cutlets, flattened
  • carrots, in thin sticks
  • chayotes, in thin sticks
  • 150 grams panela cheese
  • salt, and pepper to taste

  • Place the chicken schnitzels on a flat surface, season with salt and pepper on both sides.
  • Place the vegetables and a semi-thick slice of panela cheese in the center of the schnitzel. Roll up the schnitzel and secure with wooden toothpicks.
  • Place over low heat in a covered saucepan with olive oil; once well cooked, increase the heat and uncover to let them brown a bit.
  • Remove from heat.
