Chicken Barbecue in Pressure Cooker

Easy recipe for chicken barbecue cooked in a pressure cooker, quick and delicious. With the flavor of ancho chili, garlic, and cumin, it will give a very rich and appetizing touch. Plus, it will be ready in no time. Enjoy it with some small tortillas.

  • 6 ancho chiles, toasted and soaked in salted water. (reserve the water)
  • 4 cloves garlic, roasted
  • 1 teaspoon cumin, whole, roasted
  • 1 pinch cloves, roasted
  • 1 pinch coarse salt
  • 1 cup button mushrooms, sliced
  • 1 cup oyster mushrooms, sliced
  • 8 pieces chicken, thigh and drumstick
  • 1/4 cups epazote
  • 3 leaves bay
  • 2 avocado leaves
  • 10 banana leaves, soaked in hot water
  • 2 cups nopal salad, for serving
  • corn tortillas, for serving

  • For the sauce, blend the chiles with the garlic, cumin, clove, and salt with a little of the soaking water from the chiles; it's important that it remains thick.
  • In a bowl, mix the mushrooms with the chicken and the sauce; add epazote leaves, avocado leaves, and bay leaves. Marinate in the refrigerator for about 30 minutes.
  • Place a rack, water, and banana leaves in the pressure cooker for the base. Add the chicken and cover with a banana leaf. Cook in the pressure cooker for 30 minutes. Serve and enjoy the chicken barbecue.
