Chicken Breasts in Pickling Sauce

I present a recipe that has been passed down through generations in my family, pickled chicken. Previously, vinegar was used as a way to preserve food longer; now we use it for its rich flavor.

6 chicken breasts, sliced
1 onion
2 bay
4 garlic
1 carrot
pepper, to taste
vinegars, to taste
olive oil , to taste
salt , to taste

Sauté the onion, carrot, garlic, bay leaf, and pepper in a pot with a little oil.
Add the chicken and season with salt and pepper; once it changes color, add the vinegar and more olive oil. Cook for 30 minutes.
Remove from heat, and once cooled, place the pot in the refrigerator and let it sit overnight. Serve cold.
