Chicken Breasts with Artichokes

This is a delicious and simple recipe for chicken breasts with artichokes that you can prepare any day of the week. It is an Italian dish.

  • 5 artichoke, medium
  • 6 tablespoons olive oil
  • 1 teaspoon salt
  • 1 clove garlic, finely chopped

  • 3 chicken breasts
  • 2 tablespoons white wine
  • 1/2 lime juice

  • Remove the tough leaves from the artichokes and cut off the tips. Peel the stems. Place in a bowl of water with lemon juice to prevent discoloration.
  • Slice the artichokes thinly and place them in a pot with the oil, salt, garlic, and pepper. Cover with at least 3 and a half cups of water. Cover the pot and cook over medium heat for 15 minutes.
  • Place the chicken breasts in the pot, along with the artichokes, and after 2 minutes, add the wine and continue cooking. (Note: be careful not to burn the artichokes).
  • When the chicken is cooked, remove it from the pot and slice it.
  • Serve with the artichokes and season with additional salt and pepper. Serve hot.
