Remove the tough leaves from the artichokes and cut off the tips. Peel the stems. Place in a bowl of water with lemon juice to prevent discoloration.
Slice the artichokes thinly and place them in a pot with the oil, salt, garlic, and pepper. Cover with at least 3 and a half cups of water. Cover the pot and cook over medium heat for 15 minutes.
Place the chicken breasts in the pot, along with the artichokes, and after 2 minutes, add the wine and continue cooking. (Note: be careful not to burn the artichokes).
When the chicken is cooked, remove it from the pot and slice it.
Serve with the artichokes and season with additional salt and pepper. Serve hot.
