Chicken in Tomato Sauce in a Skillet

The recipe is designed with typical Mediterranean ingredients to give it a twist, but they are very easy to find.

  • 3 tablespoons vegetable oil
  • 3 chicken breasts, in half
  • salt

  • 3 tablespoons olive oil, for the sauce
  • 2 tablespoons garlic, finely chopped
  • 2 cups tomato, cut into small cubes
  • 1 cup red wine, for the sauce
  • 1 bunch basil, clean and rustic chopped

  • Parmesan cheese, for accompaniment

  • Season the chicken with enough salt and pepper, heat the oil over medium heat and sear the breasts; lower the temperature, cover the skillet and cook for 5 minutes. Set aside.
  • For the sauce: heat the olive oil over low heat in the skillet and add the garlic, cook for 1 minute and add the tomato, then season with salt and pepper.
  • Increase the heat to medium, add the red wine, basil, and cook for 5 more minutes.
  • Add the breasts and cook for 10 minutes, until fully cooked.
  • Serve the chicken with the sauce, decorate with basil leaves and accompany with parmesan cheese.
