The recipe for chicken lettuce tacos with BBQ chipotle sauce is very tasty. They are delicious little chicken tacos where the tortilla is replaced by lettuce leaves, a very fresh and healthy recipe. Perfect for a hot day.
750 grams chicken breast, boneless, skinless, and diced
250 grams white button mushrooms, washed and chopped
1 Romaine lettuce
1/2 cups fresh cilantro, washed and chopped
1/2 cups peanuts, chopped

In a wok or cast iron skillet, heat the oil. When it is very hot, add the ginger, onion, bell pepper, and garlic. When it starts to brown, add the chicken. Spread the chicken over the surface of the pan or wok to allow it to brown and not cook in its juices.
Stir the chicken until it is golden brown. Add the mushrooms and stir until their liquid evaporates and the mixture starts to brown again. Add 1/2 jar of BBQ Chipotle Cocina Mestiza sauce. Let it thicken a bit and turn off the pan.
Assemble tacos: Fill the lettuce leaves with the chicken mixture. Sprinkle with cilantro and chopped peanuts and serve with the rest of the BBQ chipotle sauce to add to taste at the table.
