Chicken with Mayonnaise and Chipotle

  • 4 half chicken breasts
  • 1/4 cups olive oil, for marinating
  • 1 teaspoon thyme, for marinating
  • 1 teaspoon oregano, for marinating
  • 1 teaspoon garlic powder, for marinating

  • 1 cup table cream
  • 1 cup cream cheese, at room temperature
  • 1 box McCormick® Chipotle Mayonnaise Dressing, 350 g
  • 2 cups new potatoes, cut in half
  • 1/2 cups Manchego cheese, grated
  • 1 tablespoon cilantro, finely chopped

  • Place the chicken breasts in a baking dish and add the olive oil, thyme, oregano, garlic powder, and season with salt and pepper. Marinate for 30 minutes.
  • Mix the half-and-half, cream cheese, and McCormick® Chipotle Mayonnaise Dressing in a bowl. Set aside.
  • Cook the chicken in a skillet over high heat for 2 minutes on each side. Set aside.
  • Place the chicken in a baking dish, pour the dressing mixture over it, add the baby potatoes, and sprinkle cheese on top of the breasts. Bake at 200 °C for 30 minutes.
  • Garnish the chicken with chipotle mayonnaise with cilantro and enjoy.
