Coconut Chicken with Lemon

  • 3 tablespoons clove garlic, finely chopped
  • 1 tablespoon ginger, grated
  • 1/4 cups cilantro, finely chopped
  • 1/3 cups lemon juice
  • 1 tablespoon coconut oil
  • 2 chicken breasts

  • Mix the garlic cloves, ginger, cilantro, and lemon juice in a bowl. Set aside.
  • Melt the coconut oil in a skillet, add the chicken breasts, season with salt and pepper, and cook for 3 minutes on each side. Remove the chicken from the skillet and set aside.
  • In the same skillet, pour in the chicken broth, coconut extract, and the lemon-garlic mixture, cook for 3 minutes, and add the chicken breasts. Cook the stew for 5 minutes.
  • Serve the coconut chicken with lemon alongside salad and rice.
